St. Patrick's Day Nibbles and Nectars

How was your long weekend? We got lucky with some gorgeous weather in Colorado and spent much of the weekend soaking up the warm sun and enjoying time outside. We're not quite ready for summer yet, but we're loving the break from the cold and snow!

Valentine's Day has come and gone, so it's time to turn our attention to shamrocks and pots of gold...aka St. Patrick's Day! We're putting the finishing touches on our St. Paddy's Party in a Pinch and we'll be revealing it later this week. In the meantime, we've rounded up some delightful food options for your March 17th celebration.

We clearly have some sort of obsession with dessert/booze shots...they keep showing up every time we do one of these holiday food/drink round ups. But they're just so pretty and fun! Sorrynotsorry. The St. Patrick's day version is green (but ombre green...swoon!!) and features gold sprinkles on top. So festive!

Colcannon is basically mashed potatoes Irish style. It combines potatoes, scallions, cabbage, kale, butter, and milk. We're calling it a healthy version of mashed potatoes since it at least includes some greens (ignore that whole stick of butter thing).

Simple, colorful, and on a stick: a winning party combination. We love the slightly subtle reference with this option - a rainbow of fruit for little and big leprechauns to enjoy. 

Obviously we needed something with Guinness in it. This pot pie recipe sounds delicious and the puff pastry shamrock on top is the perfect touch. Vegetarian or avoiding red meat? Simply omit the beef and switch to a veggie stock and you'll be all set. You may want to add a few extra veggies to make sure you still get the full 6 servings.
